Dandelion

Most people are aware that dandelions are edible along with the fact that they have many health benefits. Getting people to eat it however, is another story.

My first dish I tried a sort of boiled vegetable dish featuring onions, garlic and some extremely bitter dandelions. Yup, I was the only one eating it that night. After that, I had to get real sneaky, chopping them up and sliding them in to whatever dish I could. They were AMAZING in panini sandwiches, homemade pizza and sprinkled on oven baked nachos (especially with cheese). My most successful experiment was when I added them to roasted potatoes. If you add them in shortly before you plan to take the potatoes out of the oven, they get mixed in with the oil, salt and pepper and become crispy, almost like kale chips.

Dandelion flowers are also edible and actually taste quite good raw. Just be careful of the occasional bee or ant!

Overall, I would not use dandelion as a main ingredient due to the bitter taste, but if you want to enjoy the health benefits or eliminate weeds, you can use it chopped up in basically anything, either as a garnish or lettuce substitute. (It has been really handy in my house for exactly this since we go through lettuce very quickly.)
